– 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
– 2 tbsp coconut oil
– 1 medium yellow onion, chopped
– 2 cloves garlic, minced
– 1 tbsp grated fresh ginger
– 1 tbsp turmeric powder
– 1 can (13.5 oz) coconut milk
– 1 tbsp fish sauce
– 1 tbsp lime juice
– 1 tsp brown sugar
– 1/4 cup chopped fresh cilantro, for garnish
– Cooked rice, for serving

1. π₯ Heat coconut oil in a large skillet or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
