Nando’s Portuguese Chicken and Rice – one pot recipe

– 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
– 1 large onion, chopped
– 2 cloves garlic, minced
– 1 red bell pepper, chopped
– 1.5 cups long-grain rice, rinsed
– 3 cups chicken broth
– 2 tbsp Nando’s Peri-Peri sauce (adjust to your spice preference!)
– 1 tbsp olive oil
– Salt and pepper to taste
– Fresh cilantro, chopped (for garnish)
– 1 lemon, cut into wedges (for serving)
👨🍳 **Preparation Steps:**
1. 🔥 In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the chicken and cook until browned on all sides. Season with salt and pepper. Remove chicken and set aside.
2. 🧅 Add the chopped onion and bell pepper to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
